I have an old Palm Pilot Pro, the palm itself isn't working but display is in perfect condition (touchscreen too). I found that display is made by Picvue, doc's are available here:

Picvue PVG1616041WE01

I'm wondering, is it possible to connect it to Parallel port? Any help will be greatly appreciated!

That looks like it would work with some lcd controller chip like SED1335 for example.
So you can't connect it straight to the parallel port but you need some controller in between. And if you're planning to use some ready made programs SED1335 should be good choice as it is supported in many of them.
