okay, I've got a module with standard pinouts, but I need to find a schematic that doe s not include the potentiometers for the backlight, as mine doesn't have one.Any pointers?

Uhm if you have no backlight you can omit the pot wiring, the rest stays the same.

By the looks of things I still need the pot between pin3 and GND, correct?
What is this for, contrast?

Yes, though i have no idea what schematic you're talking about, pin 3 on most schemes is the contrast control, you will need that.
