Could I use a CCFL inverter from maplins:

for a EL backlight on my Data Vision DG-24128-06 240x128 LCD:

Does the Voltage and frequency matter much? (could I get away with it?)

No, CCFL (for Cold Cathode Fluorescent tubes) inverters cannot drive EL sheets. You need a mini-inverter for EL, like the kind included with the EL tape from the PC modding scene.

thanks for the quick reply. that sounds about right.
CCFL inverter for CCFL and EL inverter for EL

But would I be able to mod this inverter to give the correct voltage and freq i need?

OR is there a chip I can buy from say maplins to invert the DC+12v to about 300v AC?

I think those modding mini-inverters will do. You can buy mini-inverters seperately but i have no clue where in the UK.
