I'm looking for the largest graphical displays that would fit into a 5" bay on a computer case (1bay or 2bays). Basically something I could wire up, then mount.

Not looking for a "TV", more an info display.

Eventually I'd like to learn how to add touch-screen capabilities too, but one step at a time :-)

Any recommendations? :-)

I think you should look for 240x128 displays. Some 320x240 display might also fit.
You should look for some display candidates and check the exact sizes from the datasheets.
